How to Make Samosa

Samosa is a popular fried pastry found in various cuisines, including Indian, Middle Eastern, and Southeast Asian. It typically consists of a crispy, flaky dough filled with savory ingredients such as spiced potatoes, peas, lentils, or minced meat. Samosas are often served with chutneys or dipping sauces, adding a tangy or spicy element to the dish.

Ingredients:


For the dough:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup warm water
  • 1 tablespoon oil
  • 1/4 cup ghee (clarified butter)

For the filling:

  • 2 potatoes, boiled and mashed
  • 1 cup peas, boiled
  • 1/2 cup chopped onions
  • 1/4 cup chopped green chilies
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Oil for frying

Instructions:

Prepare the dough:

  • In a large bowl, combine the flour and salt.
  • Make a well in the center and add the warm water, oil, and ghee.
  • Gradually mix the ingredients until a dough forms.
  • Knead the dough for 5-7 minutes until smooth and elastic.
  • Cover with a damp cloth and let it rest for 30 minutes.

Make the filling:

  • In a large bowl, combine the mashed potatoes, boiled peas, chopped onions, green chilies, cumin powder, garam masala, turmeric powder, and salt.
  • Mix well until the ingredients are evenly combined.

Assemble the samosas:

  • Roll out the dough on a lightly floured surface into a thin sheet.
  • Cut the dough into squares of equal size.
  • Place a spoonful of the filling in the center of each square.
  • Fold the dough over the filling and seal the edges tightly.
  • Use a fork to crimp the edges for a decorative finish.

Fry the samosas:

  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Carefully drop a few samosas into the hot oil and fry until golden brown on all sides.
  • Remove the samosas from the oil and drain on paper towels.
  • Repeat with the remaining samosas.

Serve:

  • Serve the samosas hot with chutney or tamarind sauce.

Tips:

  • For a healthier option, bake the samosas in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown.
  • You can customize the filling with other vegetables like carrots, cauliflower, or spinach.
  • For a spicier filling, add more green chilies or cayenne pepper.
