A Flavorful Indian Lentil Dish

Dal Tadka

Dal Tadka is a classic Indian lentil dish known for its rich, creamy texture and aromatic spices. The word “tadka” refers to the tempering process, where spices are heated in oil to release their flavors. This dish is a staple in many Indian households. It can be enjoyed as a main course or a side dish.

Ingredients:

  • 1 cup yellow lentils (urad dal)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon coriander powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 1 sprig curry leaves
  • 1 dried red chili

Instructions:

  • Rinse the yellow lentils under cold water until clear. Transfer them to a pressure cooker. Add enough water to cover them by about 2 inches. Add a pinch of salt. Cook on high pressure for 15-20 minutes. Continue until the lentils are soft and cooked through.
  • Make the Tadka: In a small saucepan, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then, add the curry leaves and dried red chili. Stir-fry until the spices become fragrant.
  • Sauté Aromatics: Add the chopped onion, minced garlic, and grated ginger to the tadka. Sauté until the onion becomes translucent and golden brown.
  • Add Spices: Stir in the red chili powder, turmeric powder, garam masala, and coriander powder. Cook for a few seconds, stirring constantly.
  • Combine with Lentils: Pour the tadka mixture into the cooked lentils. Season with salt to taste and stir well to combine.
  • Simmer: Let the dal simmer for a few minutes to allow the flavors to meld. Garnish with fresh cilantro leaves before serving.

Tips:

  • For a creamier texture, you can use a combination of yellow lentils and whole black gram (urad dal).
  • Adjust the spice level by adding more or less red chili powder.
  • Serve Dal Tadka with rice, roti, or naan.
  • For a vegan option, use vegetable broth instead of water when cooking the lentils.
